WEEK 2 – Meaning of Preservation
Preservation is the process of keeping farm produce fresh and safe for a long time by preventing spoilage. The General Methods of Preserving Farm Produce are as follows: Drying, Smoking, Salting, Refrigeration, Freezing, Canning, Bottling, Processing into other forms, Use of chemicals and Proper storage in barns, silos, or stores

WEEK 5 – Methods of Preserving Cereal Crops
Cereal crops are Cereal crops: maize, rice, millet, sorghum, wheat. The method of preserving cereal include Sun drying, Threshing and winnowing, Storage in silos or granaries, Use of insecticides, Smoking.
WEEK 6 – METHODS OF PRESERVING ROOT AND TUBER CROPS
Root and tuber crops are yam, cassava, cocoyam, sweet potato. The methods of preserving root and tuber crops include Sun drying, Storage in barns, Burying in soil, Refrigeration and Processing into garri, flour, fufu.
WEEK 8 – Methods of Preserving Fruit Crops
Fruit crops are orange, mango, pineapple, banana, pawpaw. The methods of preserving fruit crops includes Refrigeration, Drying, Bottling, Canning and Processing into juice, jam, or marmalade.
WEEK 9 – Methods of Preserving Oil Crops
Oil crops are oil palm, groundnut, soybean, coconut. The methods of preserving oil crops include Sun drying, Storage in airtight containers, Smoking, Use of chemicals and Processing into oil (palm oil, groundnut oil).
WEEK 10 – Methods of Preserving Vegetable Crops
Vegetable crops are tomato, pepper, okra, spinach, cabbage. The methods of preserving, Sun drying, Refrigeration, Blanching and drying, Smoking and Processing into paste or powder
